Roasted Sweet Potatoes are so healthy, so easy, and so delicious!
Simply wash and chop sweet potatoes and place them on a healthy non stick baking sheet (you can add chopped onions and/or red bell peppers if you desire). Drizzle with olive oil and sprinkle with fresh ground Himalayan pink salt and black pepper. Bake at 400 degrees to your desired doneness (about 45 minutes, depending on your oven). Watch closely to prevent burning. Carefully turn over with a spatula half way through baking time. Get creative and experiment. Try a drizzle of balsamic vinegar, yum!
