Sexy Cornbread Dressing is so delicious and can be customized to fit your personal taste. You can substitute vegan options for the milk and eggs in the cornbread. You can also substitute vegan options for the butter such as a vegan margarine or coconut oil. And you can use vegetable broth and bouillon instead of chicken.
Start with prepared cornbread of your choice. This is the recipe I used. I used oat flour instead of all purpose wheat flour because I wanted it to be healthier. Therefor it is wheat and gluten free (make sure your oat flour is gluten free).
CORNBREAD
3 cups cornmeal
1 cup oat flour
2 tbsp baking powder
1 1/2 tsp salt
2 cups milk
3 eggs (beaten)
1/2 cup vegetable oil
Preheat oven to 425 degrees. Oil a 9×13 baking dish. Combine dry ingredients, add in the wet ingredients. Mix well. Pour into baking dish and bake for approximately 30 minutes. Ovens vary so when a toothpick inserted into the middle comes out clean, it is done. set aside and let cool.
1 large onion (chopped)
1 stick of salted butter
1 can of pitted black olives (6 oz.) (sliced)
1 tbsp chicken bouillon (preferably natural, without monosodium glutamate)
2-4 cups chicken stock (preferably natural, without monosodium glutamate)
1 tsp celery salt (optional)
2 tsp sage (optional)
salt and pepper
Customize it to your personal taste. You can also use chopped celery in which case you would saute it with the onions. You can add any type of vegetable, meat, mushrooms, etc. that you would like. You can also omit the onions and/or olives.
Saute the onions and butter with a pinch of salt over low heat until the onions are translucent. Add in the bouillon and mix well. Break up and crumble the cooled cornbread. Add the onion mixture, olives, celery salt and sage to the crumbled cornbread and mix well. Add fresh cracked pepper and Himalayan pink salt to taste. Add enough chicken stock to make it VERY moist. Cover with foil and bake at 350 degrees until hot (approximately 30-45 minutes). If you want a crustier top, remove the foil for the last 10-15 minutes.
