Greens, Beans, Nuts/Seeds, and Whole Grains…This recipe contains all four of the Longevity Food Groups
2 cups greens (I used baby kale, baby spinach, and baby chard)
1 cup raw cashews (or nuts/seeds of your choice)
1 block of tofu (crumbled)
3/4 cup water (or reserved pasta water)
1/4 cup extra virgin olive oil
2 tbsp nutritional yeast
1/2 tbsp dried basil (or 2 tbsp fresh chopped basil)
1 tsp dried Italian herb blend
1/2 tsp dried oregano
1 tsp garlic powder (or several cloves of roasted garlic)
1 tsp onion powder
Himalayan pink salt and black pepper to taste
This is a very versatile and forgiving recipe. Adjust ingredients and amounts to your personal preference. Blend until smooth and creamy. Pour over whole grain or gluten free pasta. It’s also great on rice, quinoa, potatoes, fish, chicken, and much more!
