I like to make a lot because I freeze the leftovers to make dressing later. Dressing is a great side dish to have anytime, not just for the holidays! But if you would like to make less, you can easily make 1/2 or even 1/3 of this recipe.
3 cups cornmeal
1 cup gluten free flour of your choice (I like to use oat flour, see my oat flour blog post)
2 tablespoons baking powder (I like to use aluminum free baking powder)
1 1/2 teaspoons salt
2 cups milk of your choice
3 eggs (beaten)(Or you can use an egg substitute)
1/2 cup oil (I usually use canola oil)
Preheat oven to 425 degrees. Grease a 9 X 13 glass baking dish (use a smaller dish if you are making less). I usually use either coconut oil or canola oil to grease the dish. In a large bowl, combine the dry ingredients well. Add the wet ingredients. Mix just until well blended. Pour into prepared dish. Bake for 20-30 minutes, until a toothpick poked into middle comes out dry. Enjoy!
