Salmon has so many health benefits including being high in Vitamin D, which we all need. Salmon patties are easy and a great way to get kids to eat salmon as well as adults that don’t typically like it. Serve them with any kind of sauce including soy sauce, hot sauce, tarter sauce, cocktail sauce, remoulade sauce or even ketchup or mustard, to name a few. Open and drain 2 cans of Wild Alaskan Salmon (always choose Wild Alaskan Salmon, not Atlantic or farm raised). Pour the salmon into a large bowl. Remove any very fatty or large pieces of skin if desired. Skin and bones are very nutritious but I do remove the larger, very fatty pieces of skin for this recipe. Add 2 eggs and 1/2 cup of cornmeal. Season with salt and pepper. You can also add chopped sauteed onions and/or bell peppers if desired. With hands, form patties and place on a healthy nonstick baking sheet. Bake at about 400 degrees for about 30 minutes. If you want a darker, more crispy patty, you can fry them in a little coconut or canola oil after removing from oven. These are also delicious cold the next day as a quick, nutritious snack!
