Preheat oven to 350 degrees. Coat a loaf pan with coconut oil. In a blender, combine 2 cups raw cashews, 5 eggs, 2 tablespoons coconut oil (melted), 2 tablespoons coconut flour, 1 teaspoon baking soda, 1 tablespoon honey, and a pinch of salt. Blend until smooth. Add 1 tablespoon apple cider vinegar. Blend until combined. Pour into loaf pan. Bake for 25 minutes. Cover pan with foil. Bake about 20 more minutes or until toothpick inserted in middle comes out clean. Never feel guilty about eating bread again!
